GRILLED COCONUT SHRIMP WITH HONEY LIME GLAZE 6 SERVINGS 1/2 cup unsweetened coconut milk 1/4 cup plain Greek yogurt 1/2 cup fresh cilantro, chopped 4 cloves garlic, peeled 1/2 tsp sea salt 1-1/2 lbs shrimp, shelled and deveined 1/4 cup honey 1 whole lime, juiced 1/4 tsp cayenne pepper 2 tsp Cholula sauce 2 Tbsp sweet coconut flakes dash Stevia to taste Directions: Pour coconut milk into a food processor with the cilantro, yogurt, garlic, and salt. Pulse for about 20 seconds. Place shrimp in a dish and pour coconut mixture over top. Let sit in mixture for at least ten minutes (or as long as you'd like) For the glaze, in a separate bowl combine honey, lime juice, Cholula sauce, Stevia and cayenne. Whisk until incorporated. Set aside. Heat grill to medium heat. Place shrimp on skewers and grill over medium heat, basting with the glaze. Reserve some of the glaze for basting right before serving and then sprinkle with sweet coconut flakes. Grill for approximately 5 minutes or until shrimp is firm to touch.
