This time of year it's always great to warm up to a wonderful cup of soup! This soup is great for those stuffy noses and irritated throats. Not only that, it's delicious!!! Thanks for sharing Cindy!


1 head of Cabbage (chopped) 1 bunch of Spinach 1 whole onion (chopped) 4 stalks of celery (chopped) 4 cloves of garlic (chopped) 2 zucchini (sliced) 1 lb. 20 oz can of Organic diced tomatoes (fire roasted) 2 32 oz. Organic chicken broth (low sodium) Olive oil 2 TBS Simon & Garfunkel seasoning ( parsley , sage, rosemary , thyme ) salt & pepper


In a BIG pot...Sauté onions, celery and garlic in a little olive oil until onion clear and celery soft. Add spinach and cook until wilted. Add zucchini, can of tomatoes, cabbage, spices and chicken broth. Bring to a boil then simmer until cabbage is wilted. Salt and Pepper to taste. ENJOY !
