SPINACH & MANDARIN ORANGE SALAD WITH BALSAMIC VINAIGRETTE 1 SERVINGS 3 cups baby spinach 1/3 cup Mandarin orange slices 1/8 cup red onion, diced or thinly sliced (to taste) 1 oz gorgonzola cheese, crumbled* 1/4 cup red pepper, chopped 1 Tbsp balsamic vinegar 3 tsp juice from an orange dash sea salt & black pepper to taste 3 tsp extra virgin olive oil Directions: Put baby spinach on a plate. Add mandarin oranges, sliced onions, crumbled gorgonzola cheese and chopped red peppers. To make the vinaigrette, pour "good" balsamic vinegar into a small bowl.
